Pendleton Bakery is set to open its doors on January 1, 2026, at 8 a.m., bringing a variety of baked goods to the community of Pendleton. Located at 380 S. Main St., the bakery will specialize in a range of treats, including pastries, bread made from locally sourced Oregon wheat, and traditional French-style baguettes.

Owner and head chef, Valerie Anctil, brings her expertise in dessert and pastry creation to the new venture. Anctil holds a degree from the Culinary Institute Lénotre in Houston and previously owned Opus Desserts in Carlton, which opened in 2015. Her experience also includes positions at Beaverton Bakery and the prestigious Paris Hotel and Resort in Las Vegas.

Community Engagement and Product Offerings

Pendleton Bakery aims to create a welcoming environment for locals. Anctil’s partner, Jeff Lorton, a local ag-tech entrepreneur, shares her passion for baking, particularly bread. The bakery will offer a diverse menu, featuring pies, bars, tarts, muffins, cakes, cupcakes, breadsticks, calzones, empanadas, and puff pastries. Notably, there will be no sit-down dining available, focusing instead on takeaway options.

The bakery already made an impression during the recent Pendleton Downtown Association’s Holiday Stroll and Holiday Lighted Parade on December 13, where they distributed around 200 maple star shortbread cookies. Feedback from the community highlights the owners’ friendly demeanor and the quality of their baked goods.

With the opening of Pendleton Bakery, residents can look forward to fresh, high-quality baked products made by experienced professionals. As the new year begins, this establishment is poised to become a sweet addition to the local culinary landscape.
