winter-weather-hits-hard-prepare-with-this-cozy-soup-recipe

UPDATE: Winter has officially arrived in Kimberton, PA, as temperatures plummet to a frigid 17 degrees Fahrenheit with howling winds and snow in the forecast. Residents are urged to prepare for the cold snap with hearty meals that warm the soul.

As the mercury drops, many are turning to comfort foods, and one standout recipe is butternut squash soup. Pam Baxter, an avid organic vegetable gardener, emphasizes the cozy appeal of this dish during the winter season. “It’s the perfect time to hunker down, and this soup is a family favorite,” Baxter shared.

The urgency of winter weather makes now the ideal moment to whip up this delicious soup. Baxter’s recipe, featured in Organic Style magazine, is not only easy to make but also packed with flavor. Here’s how you can prepare it in under an hour:

Butternut Squash Soup Ingredients:
– 1 tbsp. olive oil or butter
– 1 small onion, chopped
– 1 tsp. honey
– 1 large butternut squash, peeled and cut into 1-inch cubes
– 6-8 cups water or chicken stock
– 1/4 cup heavy cream (optional)
– Salt and pepper to taste

Cooking Instructions:
1. In a large saucepan, heat oil or butter. Add the onion and cook until golden, about 5-10 minutes.
2. Stir in honey until it bubbles, then add the squash and 6 cups of liquid. Bring to a boil, reduce heat, and simmer until the squash is tender, about 30 minutes.
3. Cool slightly and blend in batches or use an immersion blender. Return to heat and add cream, salt, and pepper as desired.

For those looking for a healthy twist, consider garnishing with crumbled feta cheese or tamari-roasted pumpkin seeds. Baxter notes that pumpkin seeds can easily be toasted at home for an added crunch.

This winter context brings an emotional connection to the season. As families gather for Thanksgiving and the holidays, Baxter’s soup recipe serves as a reminder of warmth and togetherness during the chilly months ahead.
